Grilled organic chicken fillet on a bed of quinoa salad.

Serving for 2 

Ingredient 

1 small cup quinoa
2 organic chicken fillet
2 table spoon olive oil
Half Red chilli optional
1 small orange
Pinch of parsley and mint
1 medium size red pepper 
1 avocado for decoration

Method 

1- Place quinoa and 2 cups cold water in a saucepan over high heat. Bring to the boil. Reduce heat to low. Simmer, covered, for 10 minutes or until water has absorbed and quinoa is tender. Rinse. Drain.
2- marinate the chicken fillet with1 table spoon olive oil.  cook the chicken fillet in the oven on medium- low temperature.  
3- Combine quinoa, orange juice, parsley, mint, onion, 1 table spoon olive oil and red pepper in a bowl. Season with black pepper. Toss to combine. Serve chicken with quinoa salad.
4- decorate your meal with chops of avocado on the top.
